Fish in Methi


This weekend I'm sharing a very traditional Sindhi recipe of Fish in Methi. It has a very distinctive taste and flavour and goes well with Roti or even rice khichdi., You could try with Surmai pomfret or even Ravas fish all of which will taste good when cooked in this masala. If you are planning to have fish this weekend, you could look at trying this Sindhi recipe. I think you will like it.

Ingredients:

• 4 to 6 slices of Surmai / Pomfret fish
• 2 medium sized tomatoes finely chopped
• 1 tsp. Finely chopped ginger garlic / paste
• 2 green chillies chopped
• 1 small bunch Methi leaves (Fenugreek)
• ¼ tsp. Garam Masala
• 1 tsp. Coriander Powder
• 3 tsps. Oil
• Salt to taste
• Few coriander leaves chopped

Procedure:

Wash the fish slices, sprinkle salt on both sides and keep aside. Take out all the Methi leaves from the stems, wash and chop finely. In a kadai heat oil. Add ginger garlic and green chillies. Reduce flame and stir for a minute. Now add methi leaves and cook in open kadai for 5 minutes. Add chopped tomatoes and the dry spices. Cover with fitting lid and cook for a few minutes till tomatoes and methi are well cooked and soft. Now put in the fish, add a little salt and cook on medium flame for 3-5 minutes. Serve hot decorated with fresh coriander leaves.

Vegetable Stew


In my last post I had shared that I was off to Kerala and that I would sample Appam and stew at many restaurants and get the recipe for authentic Kerala Stew. Here it is....

Ingredients
1 Carrot (scraped and cut into 1 inch strips)
10 - 15 French Beans (cut into 1 inch strips diagonally)
1 small Cauliflower (cut into florets)
1 medium-sized Potato (peel and cut into small pieces)
100 ml Coconut Oil
Coconut Milk of one coconut
Full garam masala - four cardamons, 2 1-inch pieces of cinnamon, 5-6 cloves
1 onion (finely chopped)
3-4 cloves of garlic (finely chopped)
1 Inch piece ginger cut into thin strips)
2 green chillies (cut into small pieces)
Salt to taste
1/2 tsp sugar

Procedure
Boil vegetables with some water for a couple of minutes till cooked. Drain out the water and keep separately. In a thick-bottomed pan, heat oil, add fresh and dried spices with chopped onion and saute for a few minutes on low flame. Add boiled vegetables and the water kept aside and bring and heat well. Turn off flame and add coconut milk, salt and sugar and serve with Appam, Neer Dosa or Idiappam.

As I pack my bag for a much awaited short holiday in Kerala, I am already thinking of the yummy authentic appam and stew that I am going to try in every restaurant that we visit. Appam and stew is one of the tastiest and lightest on the stomach meals that I have had. I will try and probe all the chefs that make this exquisite dish to find out more about their unique touch and will share with you on my return the recipe for the one that I like the best. I will also hopefully be able to pick up some interesting nuggets on Kerala cuisine. So look forward to my post next week....

Chatpatti Mathri


If you have the time and the urge this weekend to try out something in the kitchen, which can with 30 minutes of effort give you a tasty in-between meal snack for a couple of weeks,try today's recipe of Chatpatti Mathri, a light snack that goes well with a cup of tea, coffee, a cold beverage and tasty great by itself or accompanied with pickle, chutney or yoghurt.
Ingredients:

• 2 cups refined flour (Maida)
• 2 heaped tbsps. Pure ghee
• 1tsp cumin seed (jeera)
• 1tsp thyme (ajwain)
• Salt and pepper to taste
• Oil for frying

Procedure:
Heat ghee and add to the flour. Put all spices into the flour. Knead into chapatti like dough with water. Make small balls like for puris. Roll out each ball into a thick puri. Pierce each puri at several places with a fork / knife. Heat oil in kadai. When hot add one puri at a time. Fry on slow turning sides till golden brown. Don’t allow the puri to swell up. Cool and store in air tight jar. Serve with pickle, chutney and tea / coffee.

So Cheesy


This weekend whether you are inviting friends over or chilling out at home, you might like to try making yummy, melt in the mouth cheese balls as a perfect accompaniment with drinks or as a starter for a good meal or inbetween meal snacks.

Enjoy!

Ingredients:

• 100 gms cheese grated
• 1 ½ cups gram flour
• 1 small onion finely chopped
• 1 green chilli
• ¼ tsp soda bicarb
• Salt to taste
• Oil for frying

Procedure:
Make a thick batter with gram flour, grated cheese and other ingredients and a little water. Keep aside for about an hour.

Heat oil in a kadai and fry small balls of the batter on a medium flame till golden brown on the outside and well cooked on the inside. Serve hot with chutney / ketchup.

Masala Koki


As the weekend approaches, one thinks of ways to relax, chill-out and have a couple of leisurely meals which are a luxury for all big city residents. Today I share a recipe for a quick very tasty and rich breakfast ideal for winter weather that we are experiencing in Mumbai.

This is a typically Sindhi recipe, which can be relished for breakfast with the following accompaniments. A bowl of dahi and papad, mango, lemon or any other sour pickle, an omlette, fried egg, boiled egg or even egg bhurji. Enjoy Masala Koki by itself or with any of these accompaniments and top it up with a hot cup of tea, coffee or horlicks and you have a truly satisfying and yummy breakfast that is going to set your weekend off to a great start!

Ingredients:

• 2 cups wheat flour
• 1 medium sized onion finely chopped
• 2 green chillies finely chopped
• Small bunch of coriander leaves finely chopped
• ¾ cup pure ghee
• Salt & pepper to taste

Heat ½ cup ghee and add to flour. Mix in onion, green chillies, coriander leaves, salt & pepper and knead it into soft dough with some water. Divide dough into 6 portions. Heat tawa/griddle and reduce flame, flatten each portion into a round thick chapatti ¼ inch thick and cook on tawa over slow flame moving gradually. When both side are evenly covered with brown spots fry each side with ½ tsp. pure ghee till crisp and golden brown. Serve hot with curds and papad.
